This morning I made Crepes, They were delicious. For dinner i made chicken Enchiladas. Also AMAZING... if i do say so myself. Easy to make too. But the tortillas i got were too small to wrap all of the ingredients in, so i just made it more of a chicken enchilada casserole. Tastes better than it sounds!
I dont like corn so i used black beans instead. But you could use anything your little heart disires.

All you need is:
3 Chicken breasts, (you can season them any way you want.)
Cheese... again any kind you like
corn or black beans or both
salsa
salt
pepper


You take your chicken and season it, then bake it in the oven for 20 minutes.
dont worry if it isnt cooked all the way through at the end because it will finnish cooking when you back the whole thing.

Then you shred the chiken with two forks, and set aside.

Preheat oven to 375

Then layer the bottom of a baking dish with salsa.

Roll all of you ingredients (chicken,beans,cheese,corn,ect.)
into tortillas, and bake for 30 minutes.
